Baked Medhu Vadas

Ingredients
  • 1/2 cup of white urad dal, washed and soaked overnight in 2 cups of water
  • 1 small piece ginger
  • Salt
  • 1/2 tsp cumin seeds
  • 1 tbsp coriander leaves
  • 2 green chillies
  • 2 tsp oil
  • Method
  • Drain the dal and put it in a blender, add a few teaspoons of water and ginger. Blend it into a smooth batter.
  • Put it in a bowl and ferment it for few hours.
  • Pre heat the oven at 200 degrees Celsius.
  • Add salt, cumin seeds, green chillies and coriander leaves. the batter should be light and frothy.
  • Take a muffin tray and line it with paper muffin cases
  • Spray each with oil and fill it with the batter.
  • Bake it till light brown on top.
  • Serve with coconut chutney.
